Trefoils Key Lime Cheesecake Pie

It's Girl Scout Cookie time again! The delicious season is kicking off with a recipe contest, so I thought I would make my favorite dessert with twist. Key Lime Pie.

Each summer at Girl Scout Camp Chinook in West Seattle Julie and I lead a cabin, you need a special "camp name" and mine is always the same, "Key Lime".

First, let's gather up what you need for the best part, the crust. Into your food processor or small chopper goes one and 1/2 sleeve Trefoils (short bread) cookies. Add 6 tablespoons soft butter and 1/4 cup sugar. Combine it really good and spread it out in your pie pan.

Gently push crust into dish and pop it in the oven at 350 for about five minutes.

Time to make the filling! All you need is two cans of sweetened condensed milk, 3/4 lime juice, and 1/4 cup cream cheese. Here is what I have learned about lime juice in my experience, it does not matter what kind you use. I have done it all, real key limes from Florida, regular limes from the grocery store, bottled lime juice....and you know what? It does not make a difference, use what you want, it will be delicious.
